Creamy Swedish Potatoes

So there I was, at a smorgasbord somewhere near Orebro, Sweden, in the middle of a snowstorm, in a farmhouse inn next to a frozen lake. There was wasabrod—the crisp rye flatbread so beloved by the Scandinavians—and cucumber salad, as well as herrings and smoked salmon, and a savory meatball-like patty in warm, oh-so-meaty gravy. And there in a big crystal bowl was a mass of aromatic, warm diced potatoes awash in a creamy sauce and topped with chives and melting butter. How many times did I revisit the table and that bowl? Don’t even ask.

Serves 4 as a side dish

1½ pounds large, white, thin-skinned potatoes, waxy rather than floury, peeled and cut into large-ish dice
